This had become a favorite of all my friends. Let me tell ya, I only know one vegetarian (correction: two), most of my carnivorous friends stay away from anything green or good. But everyone always comes back for seconds.
Peel, and small dice one eggplant, season and roast in oven till very soft. Make a small diced mirepoix, half as much mirepoix as eggplant (carrots, celery, Spanish onion in this case). In large sautée pan caramalize onions first, then add carrots and celery. When they start to turn light brown, add eggplant. Once the celery is caramalized, deglaze the pan with red wine, cook out alcohol, add red wine, tomato paste, a little butter, salt and pepper, and a little sugar to cut the acidity of the tomatoes. Apply sauce generously to pizza dough, top with roasted bell peppers, feta cheese, and toasted sesame seeds. You could even throw some kalamata olives, but if so, go lighter on the feta, as they are both high in salt.
