In honor of national grilled cheese day, I made a grilled cheese on toasted focaccia bread with blue and Swiss cheeses, red onion confit, romaine lettuce and tomato. Delicious.

  1. I love grilled cheese on really good bread. One of my favorites is to spread peanut butter on the bread and then grill it in extra virgin olive oil. People say “yuck” until they try it and then say things like, “This is the best grilled cheese sandwich I have ever eaten.”
